'This is a quick-and-easy version of a seafood-stuffed baked potato,' explains Angelique Schultz from her home in Denham Springs, Louisiana. 'Not only does this recipe reduce prep time, it cuts down on cleanup, too. I buy cooked crumbled bacon to speed it along even more.'

This recipe is very salty! I'd highly recommend using the 2t of cajun seasoning but NO salt. I didn't follow the microwave instructions (I just can't get myself to cook anything but popcorn and water in the microwave!) - instead, I cooked it on the stovetop, adding precooked shrimp and precooked bacon right at the end. This taste pretty good but I think it was kinda dry. It needs some type of sauce or gravy. I didnt not microwave anything instead I sauteed them. I boiled my potatoes seperately. Read More
