Grilled Peppers and Zucchini

  1. Place the vegetables on a double layer of heavy-duty foil (about 18 in. x 15 in.). Dot with butter; drizzle with soy sauce. Fold foil around vegetables and seal tightly. Grill, covered, over medium heat for 10-15 minutes or until vegetables are crisp-tender.

Great side dish for grilled meats! I used light butter and low sodium soy sauce. I added a little bit of minced garlic, salt, and cracked black pepper.

Mad it tonight, with 2 red peppers, 1 summer squash and 1 zucchini. Such a quick prep for the grill, and quite yummy!
