Smoked Salmon Quesadillas

  1. In a small mixing bowl, combine the cream cheese, sour cream, dill and garlic. Spread butter over one side of each tortilla. Place three tortillas, buttered side down, on a griddle or large skillet. spread with cream cheese mixture; sprinkle with salmon and cheese. Cover with remaining tortillas, buttered side up.
  2. Cook over low heat for 2-3 minutes or until golden brown. Turn and cook 2-3 minutes longer or until cheese is melted. Cut into wedges.

I made this as written except I used the package of smoked salmon which is 6 oz. In the past my husband and I have made these quesadillas using a different recipe calling for diced green chilis....

My kids say "Yummy" and all the adults love it too! I would serve this anytime, only I would add capers to bring out the salmon flavour more!

The french go crazy for smoked salmon...so this was a hit for cinco de mayo...I wanted a bunch of mexican finger foods...was great with sour cream, salsa, and guac to dip...THANKS!

Awesome - this is a great appetizer. I used canned salmon because that's what I had and my husband and I both loved it. Definitely a repeat the next time salmon is in the house.
