Bacon-Wrapped Scallops

  1. fold a spinach leaf around each scallop half. Wrap bacon over spinach and secure with a toothpick. Place on baking sheet or broiler pan. Broil 3-4 in. from the heat for 6 minutes on each side or until bacon is crisp. Squeeze lemon over each. Serve immediately.

Good recipe. I skipped the spinach, and brushed a melted butter/lemon juice/garlic salt combo on the scallops before I broiled them. Delicious!

I would skip the spinach. (Too fussy to wrap). This year I made these for our club using 3lbs. of good bacon to wrap 2 lbs. of Sea Scallops. I rinsed the scallops & sprinkled on some lemon juice...

These were good took longer to cooked because I wanted crispy bacon soo maybe pre cooking it a bit may help....

This is a wonderful appetizer, and one I have used many times before. One thing I like to do, is leave out the spinach, and put a pat of cream cheese on the scallop and then wrap it in bacon! ...

To add a bit of magic to this recipe...sprinkle brown sugar over them before broiling! Yum!
