  • In a small bowl, combine the mayonnaise, lime juice, mustard and lime peel; cover and refrigerate until serving.

  • In a bowl, combine the onions, yogurt, jalapeno, salt and pepper. Crumble meat over mixture and mix well. Shape into eight patties. Pan-fry, grill or broil until meat is no longer pink. Serve on buns; top with cheese and mayonnaise mixture.

If I could give this 10 stars.. I would. For the FIRST time in my history with this website I did not change ANYTHING about this recipe. Seriously.. follow it exactly and you will be pleased. This was my first time cooking with venison and what a hit! The mayo sauce is wonderful (I used fat free mayo and it still tasted amazing). We grilled the burgers until there was no pink and they were still very juicy. WOW! I will always cook venison with the green onions and jalapenos.. what a touch. Made these last night and they were WONDERFUL! I have never had venison burgers before but my husband got two this season so we have a lot to use up. And I am not kidding when I say that we liked these burgers better and any beef hamburger we have ever had. The only change I did was add minced garlic to the burger mix since we really love garlic.
