Sweet Potato Loaves

  1. In a small mixing bowl, cream butter and sugar. Add egg; mix well. Combine the flour, baking powder, cinnamon, ginger and salt; add to creamed mixture just until blended (batter will be thick). Combine sweet potatoes and milk; stir into batter until blended. Fold in raisins.
  2. Transfer to two greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350 degrees F for 35-40 minutes or until lightly browned and a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

  • Editor's Note: An 8-in. round baking pan may be used instead of the loaf pans. Bake for 20-25 minutes.

This is a very good recipe that reminds me of banana bread. It is nice and sweet. The only problem is it remained a bit sticky and doughy, even though toothpick did come out clean.
