  1. Crumble meat into a 2-qt. microwave-safe dish; add onion and green pepper. Cover and microwave on high for 5-6 minutes or until meat is no longer pink; drain. Stir in the taco seasoning, tomato sauce, tomato paste, olives, water and chili powder. Cover and cook at 50% power for 10 minutes or until thickened, rotating dish once.
  2. In a bowl, whisk the eggs, sour cream and pepper. Place two tortillas in an 11-in. x 7-in. x 2-in. microwave-safe dish. Layer with half of the sour cream mixture and meat sauce; repeat. Top with corn chips and cheese.
  3. Microwave, uncovered, at 50% power for 10-15 minutes or until a thermometer reads 160 degrees F and cheese is melted. Let stand for 5 minutes before cutting.

Not great. Pretty typical for a one dish mexican recipe, but didn't really like the egg/sour cream glue layer pasted to the soggy tortilla layer. And the cheese over top of the crushed chips j...

All these ingredients are familiar ones for Ameri-Mexican foods, so there was no shock here. I used my stovetop instead of the microwave and then baked it during church (about 1 1/2 hours) at 2...

This tortilla casserole tastes great, plus it's really easy and is all done in your microwave. It turns out nice and spicy, so temper it to your tastes. My family loved it.

This is excellent! I didn't have any corn chips or monterey jack cheese so I used Dorito chips and cheddar. Will definately make this again. Thanks for the recipe.

Thjis was a very good recipe, everyone loved it and it was so easy to make. This is keeper for sure.

The last Microwave I would leave it in less than 10 minutes. Other than that it was great. Easy and in the Microwave.

Easy to make, fairly tasty. Added some salsa for a little heat.
