Broccoli Barley Soup

  1. In a large saucepan or Dutch oven, saute the first three ingredients in butter until tender. Add the chicken and vegetable broths, barley and rosemary. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until barley is tender. Add broccoli; cover and cook for 10 minutes or until broccoli is tender.
  2. In a small bowl, combine cornstarch and cold water until smooth; stir into the soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in the cream, salt and pepper (do not boil). Sprinkle with Parmesan cheese.

This turned out bland. Had to add quite a bit of salt. It might be better with cheddar cheese.

This recipe is amazing! I added a little cheddar cheese and some cayenne pepper and it was perfect. Great great flavor. One of my favorite soups so far, very filling!

Loved it! Very flavorful and hearty. I used 7c.fat free/reduced sodium chix broth and 1c. fat free 1/2 and 1/2. Very warming and family really enjoyed it, something different.Thanks!

This was a good soup. I liked that it wasn't full of butter and cream. The barley was great and gave the soup something chewy. It makes a lot! Half it.

I love the texture of the barley, and the broth is delightfully different than the standard soups I make. Hubby loves it!

This was delicious. I added a little bit of ground red pepper to spice it up a bit! YUM!
