  1. In a large nonstick skillet or wok, saute the garlic, basil and pepper in hot oil for 30 seconds. Stir in beans and squash until evenly coated with spices. Cover and cook for 4 minutes, stirring three times.
  2. In a small bowl, combine the cornstarch, water, vinegar and honey until smooth. Stir into bean mixture. Cook and stir for 1-2 minutes or until slightly thickened. Stir in spinach and tomatoes; heat through. Sprinkle with almonds. Serve immediately.

This was a nice dish. Super simple. I didn't have any honey so just substituted with sugar. I also added feta to the finished dish.

Tasty! I made it twice and this time I served the rest over a bed of spinach, and sliced the roma tomatoes instead of chopped them.

Giving 5 because as is it makes a great side dish. I made a vegetarian meal out of it and saved custom version that is so good, I could eat weekly.

Easy, delicious, and nutritious! I didn't have squash or tomatoes, but it made a great topping for polenta. Very tasty.
