Good quesadilla. I mixed the beans, salsa, corn, beef, cilantro, lime juice, diced jalapeno, and salt together and left it to marinate before I served with cojack cheese and baked at 425 degree...

Quick, easy and pretty darn tasty. I had some fresh type salsa on hand so I just used that instead of what was suggested for salsa. Also added a dollop of sour cream. I will make this again.

Simple to make. Great use of leftover roast beef.

These quesadillas were delicious, and a hit with my husband who's not a big bean eater. My only issue with them was when I tried to flip them over in the pan, they didn't stay together very well...

Our family modifies the recipe slightly, but this is one of our favorite meals!

I mixed the beans and corn with a can of Rotel and passed on the salsa--quite tasty.
