  1. In a small bowl, combine the tomatoes and peas. In a jar with a tight-fitting lid, combine the oil, vinegar, Parmesan cheese, garlic, sugar, salt, basil and pepper; shake well. Pour over tomato mixture and toss to coat. Serve over lettuce.

Made this a couple of days ago. Doubled the recipe. Eliminated sugar and added an additional garlic clove but otherwise made recipe as is. It was excellent! A light and easy summer salad. N...

Very good! Good substitute for dressing. It was moist enough with the lettuce.


Really tasty dressing, but next time I will use a little less of it, or up the amount of lettuce/peas/tomatoes. Great for using every-day household ingredients. Yum!
