Salmon with Spinach Sauce

Rated as 4.29 out of 5 Stars

"You won't have to fish for compliments with this tasty recipe developed by Country Woman's Test Kitchen. Poaching is a quick and healthy way to prepare an entree as delicate as fish, keeping it moist and tender while cooking. And the flavorful spinach sauce adds a pretty green accent to the pink salmon."

I would make this again...I do not have a pressure cooker. I pan fried on high heat (2 min each side) w/ some olive oil. I put the spinach on top of 4 fillets, covered, and let it rest for 5 min...

For my taste, a little bit too much lemon flavor in the spinach sauce. I will make this again but will probably use half the amount of lemon juice.

The only possible change to this recipe is to purchase additional salmon so none of the spinach sauce is wasted.

I made this for dinner tonight and we just finished eating. LOVELY recipe. Simple, delicous, quick. I don't have a pressure cooker, but I made the "sauce" as directed, except that I used fresh ...

Mmm... so delicious! I'm sharing this recipe with other spinach/salmon lovers I know! As for the extra sauce, I had it the next morning on English muffin/scrambled egg sandwiches with a little...

Quick, delicious recipe. I used about 5 oz of fresh spinach and a 2 lb salmon fillet. Even with generous amounts of sauce, we still had plenty left. Served with mushroom risotto, it was a hit wi...

Thanks for a great pressure cooker recipe! I modified it slightly by using 1/2 cup lowfat plain yogurt and 1/4 cup mayo. I only used one big fillet and I was disappointed I didn't have more. My...
