Raisin-Spice Snack Cake

  1. In a large mixing bowl, combine the first nine ingredients. Beat on medium speed for 2 minutes. Stir in raisins. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle with pecans. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

I did make a few changes to this cake, I used a butter cake mix (all that I had in the pantry), used apple sauce in place of the oil and upped the cinnamon and nutmeg to 1 teaspoon (just because...
