I followed the recipe exactly and had terrific results. Definitely use the meat thermometer to determine doneness. One cautionary note: cardamom has a fairly strong and distinctive flavor so if you have any reservations about this specific spice, use less or even substitute it with something else like rosemary. I'm planning on making this for 23 people for my Christmas dinner.
