  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.

  • In a medium bowl, cream the butter and sugar. Add eggs and vanilla; mix until fluffy. Sift together the flour, cocoa, and salt; stir into the creamed mixture alternately with the milk. Drop by teaspoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes.

  • Meanwhile ... you can make the filling. In a medium bowl, cream the 1/2 cup of butter, 2 cups of confectioners' sugar, vanilla, and salt, until fluffy. When the cookies are cooled, make into sandwiches with the filling and freeze for 1 hour.

Because of the negative reviews, I didn't use the recipe for the cookie, I just bought a choc cake mix, and added 1/3C oil, 2 eggs, and 3/4C Water at 375 for 10 min and they were perfect, I did however use the filling, because I don't like eating (or have my kids eating) shortening that's found in most whoopie pie recipes, despite reviews to the contrary, the filling is rich and delicious, and needs no liquid at all as long as you are using room temp butter. I am giving it four stars for the filling alone. Read More

I am sorry to say it but this recipe had some downs. The whoopie pies came out flatter than a pancake- they really needed baking powder. Also the icing was delicious but because it was so thick it didn't stick properly to the cookie part. I had to end up throwing it all out. I am really sorry though!!! Read More
