View All Saved Items Rate Print Share Share Tweet Pin Email Add Photo 1 Prep Time: 20 mins Cook Time: 10 mins Total Time: 30 mins Servings: 4 Yield: 4 lettuce rolls Jump to Nutrition Facts Ingredients 1 tablespoon butter 1 red bell pepper, finely diced 1 red onion, finely diced 2 stalks celery, finely diced 1 tablespoon pine nuts ¼ teaspoon paprika 1 pinch ground coriander 1 pinch cayenne pepper ½ pound ground beef 1 dash soy sauce 4 large iceberg lettuce leaves 4 long chives Directions Heat butter in a large skillet; stir in the red pepper, red onion, celery, and pine nuts. Cook and stir until vegetables are soft, about 5 minutes. Sprinkle the paprika, coriander, and cayenne pepper over the vegetables; stir to blend. Stir in the ground beef and dash of soy sauce. Cook and stir until beef is browned and cooked through, about 5 minutes. Drain fat. Divide the beef mixture between the lettuce leaves. Gently roll up leaves, encasing the meat. Tie lettuce rolls with long chives. Serve immediately. Cook's Note These lettuce rolls also taste wonderful when made with lamb, pork, or turkey.
