"This super easy salad is a refreshing blend of fresh herbs, tuna, and greens. Substitute diced chicken for the tuna if you like. It's a great summer meal."

  1. In a large serving bowl, toss together the tuna, feta cheese, lettuce, cucumber and green onion. In a smaller bowl, whisk together the olive oil, lemon juice, garlic, parsley, mint leaves, salt and pepper. Pour over salad and toss gently. Serve immediately.

This was OK. I added kalamata olives and two roasted red peppers for colour, which helped, but ultimately I don't think I'll make this again.

This is a healthier tuna salad. I used garlic scapes instead of garlic for a subtler flavor, and also added 3T mayonnaise to the dressing for a creamier texture.
