Peterson's Potato Dish

Jessica Arena

"For years I begged my mom for this recipe, always saying I'd make it every week if I could. She didn't give it to me until I turned 24, probably waiting until I was old enough to understand it's a holiday only dish! Very rich and comforting."

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Stir the hash browns, sour cream, Cheddar cheese, celery soup, onion flakes, 1/2 cup melted butter, and salt together in a 9x12-inch baking dish.
  3. Stir the bread crumbs and 1/2 cup melted butter in a small bowl; top the hash brown mixture with the bread crumb mixture. Do not mix topping until right before you put the dish in the oven, otherwise it will become soggy.
  4. Bake in preheated oven until the topping is golden brown, about 45 minutes.

Awesome Dish makes our traditional ham dinner something to rave about. Followed your directions to the letter. Thanks for sharing mom's recipe.

I used unsalted butter and plain bread crumbs as well as skip the additional salt, and came upon a beautiful finished product...even though my picture is a bit lacking. We served this for brunch...

wanted to love it...followed the recipe as is- tasted like a salt lick with a side of potatoes.
