  1. In a large skillet cook the whole garlic cloves in hot oil until light brown; discard garlic. Add the zucchini, dried mint (if using), salt, and pepper to the oil in the skillet.
  2. Cook, uncovered, over medium heat about 5 minutes or until the zucchini is crisp-tender, stirring occasionally. To serve, sprinkle with the cheese and fresh mint (if using).

Really good recipe. I didn't use the mint though. The cheese and garlic adds a really good flavor!

LOVE this recipe. It goes great with roast chicken, and herbed potatoes :)

This was easy and pretty but I wasn't crazy about the mint flavor. I used half basil and half mint and I wish I had used only basil. My husband said it was okay but he didn't go back for secon...
