My husband and I thought this recipe was very good. I just used ordinary bacon and added a touch of basil and a little sugar. Most things with tomatoes needs a touch of sugar to get rid of the flat taste. Will make again.
I couldn't find Irish bacon and used Pancetta for the first time which made the flavor of this soup fantastic. It's a true comfort meal especially when serving the recipe for Irresistible Irish Soda Bread. Thank you for sharing which brought raves from my guests!
I was kinda worried about this because it really didn't taste that great the first time around but when we heated it up the next day it was GREAT. I added chicken for extra protein and used regular cabbage. Also added some minced garlic. Potatoes were yukon golds but I think red taters might taste better next time.
The broth was very salty to me. I used the pancetta and it was stringy. I'd advise if using pacetta to cut it up in small pieces. It isn't a dish I'd make again or feel comfortable serving to dinner guests. It reminded me of the cabbage soup diet.
