This no bake chocolate cheesecake is deliciously rich and perfect for all cheesecake and chocolate lovers alike! This recipe was passed down to me from my mom.

Ingredients

  • 1 1/4 cups graham cracker crumbs

  • 1/4 cup butter, melted

  • 1/2 cup white sugar, divided

  • 1/2 cup heavy cream

  • 5 ounces dark chocolate

  • 2 tablespoons cocoa powder

  • 2 tablespoons hot water, or as needed

  • 1 (8-ounce) package cream cheese, softened

Directions

  1. Mix cookie crumbs with melted butter and 1 tablespoon of sugar; press into an 8-inch springform pan. Refrigerate crust while you make the filling.

  2. Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes; set aside to cool.

  3. Whisk cocoa powder and enough warm water in a small bowl to form a smooth paste.

  4. Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Fold in cooled melted chocolate and cocoa paste.

  5. Beat cream cheese and remaining sugar together in a separate bowl; fold in chocolate cream mixture until thoroughly combined.

  6. Spread chocolate filling on top of cookie crust; freeze cheesecake for 1 hour. Thaw in the refrigerator for 30 minutes before serving.

Tips

Taste a little of the filling to ensure that the right amount of chocolaty goodness has been reached. You can add a little more of the cocoa powder and water mixture to taste.
