Grilled Red Cabbage Slaw

Grandma wouldn't make this type of slaw. Red cabbage is grilled with tart apple cider vinegar and the added sweetness of maple syrup and green apples, and served as a warm salad.

  • 1 white onion, thinly sliced

  • 2 tablespoons olive oil

  • 1 Granny Smith apple, skin on, chopped

  • 3 tablespoons maple syrup

  • 3 tablespoons apple cider vinegar

  • 1 1/2 teaspoons garlic powder

  • 1 1/2 teaspoons onion powder

  • 1 (2 pound) head red cabbage, shredded

  • 1/3 cup chopped parsley


  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.

  2. Heat olive oil in a grill pan on the preheated grill; sauté onion in the hot pan for 2 minutes; stir in apples, maple syrup, vinegar, garlic powder, and onion powder. Cook and stir until well combined, about 2 minutes.

  3. Reduce the heat to low; stir red cabbage into the grill pan, and continue cooking until cabbage is wilted and slightly tender, about 15 minutes. Sprinkle with parsley; serve warm.

Cook's Note:

You can also enjoy this slaw cold. It keeps up to 3 days refrigerated.
