Strawberry Desserts to Make When You Can't Get Fresh Strawberries
Strawberries practically embody spring and summer. But considering how hard it is to get fresh produce nowadays, it’s easy to start mourning those missed opportunities to feast on strawberry shortcake, chocolate-dipped strawberries, strawberries and cream and more. That said, the current situation has helped renew our appreciation for preserved foods of all sorts. So, as much as we’d love the opportunity to stroll through a strawberry patch, it’s widened our eyes as to what we can do with various forms of the fruit. We’re rounding up our favorite strawberry desserts that help you usher in strawberry season without leaving your kitchen. From recipes using everything from frozen to freeze-dried berries, and even pots of jam.
Strawberry Jam Marzipan Bars
These dessert bars topped with brown sugar crumble and icing are so decadently rich, you’ll only need a small slice to satisfy. That said, it would be tough to resist a second serving of buttery, strawberry jam-sweetened pastry, enriched with nutty almond paste.
Strawberry Cake and Frosting I
Frozen strawberries flavor both the cake and the frosting. For the frosting, be sure to thaw and drain the frozen strawberries before whipping them into the frosting, otherwise it will turn out too thin. Some reviewers used the drained liquid to replace the water in the cake batter for yet another punch of strawberry flavor.

REALLY Real Strawberry Cupcakes
Recipe creator Candice says, "I've been messing around trying to make a perfect strawberry cupcake to go with the Real Strawberry Frosting I developed a couple of years ago. It's been a long road and lots of cupcakes tested and tasted along the way. The trick was NOT using puree as I do when making the frosting. Rather, grinding freeze-dried strawberries into a powder brought this cupcake recipe out of my test kitchen and into my recipe box! I am so pleased with the results!"
