Chef John's Gazpacho
The king of cold soups is gazpacho. This Spanish soup has multiple variations, but the most famous is the tomato-based gazpacho that originated in Andalucia. Modern versions can be made with tropical fruits, avocados, corn, and even watermelon. This is the recipe for "killer, end-of-summer, super-sweet tomatoes," says Chef John. Cream of Coconut and Cucumber Soup
"This vegan chilled cream of coconut and cucumber soup makes a wonderful appetizer during the hot summer season," says recipe creator Anubalas Kitchen. "Coconut and cucumbers are a great combination and make for an easy, refreshing soup."
Chef John's White Gazpacho
Instead of tomatoes, Chef John combines cucumbers, grapes, and leeks to make a gorgeous green gazpacho.
"I'm going to jump on the band wagon for this soup," says John Hess. "Easy to make and refreshing on a summer day. The jalapeno pepper complements the cucumber and honeydew melon nicely. I threw in some fresh dill just because I had some in hand. The only recommendation I would make is to use only half the jalapeno at first and then adjust it to your desired level."
Gazpacho Verde with Burrata Cheese
For this version of green gazpacho, cucumber gets blended together with garlic, fresh basil and oregano leaves, and seasoned with rice vinegar and a pinch of cayenne. Serve with a generous dollop of burrata cheese and a drizzle of olive oil over the top.
Julia's Watermelon Gazpacho
Watermelon, cucumber, red bell peppers, onion, jalapeno, lemon juice, mint, ginger, honey, and pineapple juice take a ride in the blender to make a sweet and savory fruity gazpacho. "This was absolutely delicious. A wonderful combination of sweet and spicy," says Betsey Norland.
Spring Strawberry Soup
