Vegan Chili

I created this dish for our meatless Fridays. It's a thick, delicious option for that chili craving. It's also great because you can add and substitute just about anything in the recipe. If you have a garden that's producing hot peppers, chop or puree them up and add them in place of some chili powder; use fresh tomatoes instead of canned; etc.

Lighter Pumpkin Bread

It's fall, we had pumpkin and, I wanted a nutritious snack for my kiddos. Most pumpkin bread recipes I found had one cup of oil, nearly 2 cups of sugar and all white flour. This lighter version has a nice crumb and plenty of nutrients to go along with what I feel is still a substantial amount of sugar.
