Greek Spinach

• 1 tbsp olive oil
• 2 onions, chopped
• 1 (10 ounce) package frozen chopped spinach, thawed and drained
• 3 large tomatoes, coarsely chopped
• 3 clove garlic, minced
• 2 packets chicken or beef oxo bouillon packets
• salt and pepper to taste

• Step 1

  Heat olive oil in a 12" skillet over medium-high heat.

  Stir in onions, and cook until tender. Mix in spinach and garlic. Stir in tomatoes. Allow vegetables to simmer about 5 minutes.

• Step 3

  Add bouillon packets and salt and pepper to taste. Serve hot.
