  • Heat olive oil in a 12" skillet over medium-high heat.

  • Stir in onions, and cook until tender. Mix in spinach and garlic. Stir in tomatoes. Allow vegetables to simmer about 5 minutes.

  • Add bouillon packets and salt and pepper to taste. Serve hot.

Tips

I didn't do it but it might be nice to add freshly grated Parmesano Reggiano at the table. This recipe is just so fresh and I feel healthier eating it. Olive oil, garlic, spinach, onions, and tomatoes: true "power foods"
