I love Basque chicken but lost my favorite recipe during a move. I decided to come up with my own version which was an instant hit with my hubby.

  • In a large pot, cook bacon over medium-high heat until brown and crisp (do not overbrown). Remove bacon slices and set aside. To drippings in pan, add onion and garlic and cook, stirring frequently, until tender, about 5 minutes. Add paprika and cook and stir for one minute. Remove mixture to a bowl and set aside. Add chicken to pan, and saute until lightly browned. Add onion mixture back to pan. Add tomatoes, peppers, wine, crushed red pepper, and olives (you can buy pre-sliced olives, but the whole ones are less salty and have a better flavor in the dish). Bring mixture to a boil, then reduce heat to low and simmer for 30 minutes or until chicken is tender. Season to taste with salt and pepper. Remove from heat. Crumble bacon slices. Serve the chicken over rice (our favorite is brown basmati rice)and top with crumbled bacon.
