My husband loves a store-brought protein bar, but they are so expensive and have ingredients you can barely pronounce. I thought I could do better and modified a candy recipe. They turned out perfect, and he loves them!

  • Spray a 9 x 13 baking dish with nonstick cookign spray and set aside.

  • In a large bowl, combine the peanut butter, brown rice syrup, brown sugar and cane sugar.

  • Cook 2 minutes (for 1100 watt microwave), stirring once halfway through.

  • Remove and stir in vanilla and protein powder. Quickly mix in the cereal, 1 1/2 cups chocolate chips and 1 1/2 cups peanuts until evenly coated. The mixture will be thick, but keep stirring, and it will come together.

  • Press the entire mixture gently into a buttered 9x13 inch baking dish.

  • Sprinkle with the remaining chocolate chips and peanuts. Press gently into the mixture.

  • Allow to cool completely before cutting into bars.

Tips

These bars are not terribly sweet. If you prefer a sweeter bar, I would recommend using honey instead of brown rice syrup and semisweet chips instead of bittersweet.
