I created this heart-healthy muffin recipe after making a similar one from my favorite vegetarian website. I make these slightly-sweet muffins at least 2-3 times a month now, and my family loves them. We've used all kinds of berries, and they are all equally delicious--if you are using srawberries, be sure to chop them first. Hearty and dense, they're great for a healthful breakfast or snack, and they're portable for lunches.

  • Preheat oven to 400 degrees.

  • Spay lightly with non-stick cooking spray.

  • Stir together flour, baking powder, salt, and spice.

  • Stir together bananas, milk, agave nectar, oil, and flavorings.

  • Add flour mixture to liquid mixture.

  • Stir only until blended.

  • Gently fold in berries.

  • Spoon into muffin cups, filling 2/3 full.

  • Bake for 20 minutes or until golden and muffins spring back lightly.
