1 15 oz. can black beans
1/2 med. red onion, diced
2 garlic cloves, minced
1 11 oz. can Mexi-corn
1/2 bell pepper (any color), diced
1/2 tsp. cayenne pepper
1/2 tsp. salt
1/4 c. cooking sherry
1/2 c. tightly-packed, chopped cilantro

Directions

Instructions Checklist

Step 1
In medium saucepan, bring beans, onions, corn, peppers and spices to a boil.

Reduce heat to medium-low, stir in sherry and cilantro, and simmer an additional 10 min. If the beans begin to dry out before serving, splash on some additional sherry.
Step 3
Serve over rice, as a side dish to tacos, or simply scooped up w/ tortilla chips.
