  • Preheat oven to 350 deg.

  • Saute onion, pepper, and garlic til soft. Remove from heat and stir into the cooked chicken.

  • Add additional EVOO if needed, and saute squash to al dente.

  • Stir in chicken/veggies, beans, salsa, corn, broth and taco seasoning. Boil, then reduce heat to simmer til liquid's absorbed.

  • Spoon everything into 9X13 baking dish and top w/ crushed chips and cheese. Bake 25-30 min.

Tips

If not using "Taco Seasoning I" recipe, substitute 1 packet Taco Seasoning and the amount of water as directed on the packet.
