Raspberry Lemon Meringue Pie

Love this recipe. It's so beautiful and the raspberries are a delightful surprise flavor. Use fresh raspberries or frozen. Both are delicious. My family likes a very sour pie so I use about 1/2 to 2/3 C. sugar in the lemon curd with the juice and pulp of 4 lemons. Add more cornstarch if needed to make curd thick as pudding. It will thicken more as pie cools. Like other bakers I increased raspberries to 1C. I make the meringue with about 2 T. sugar. Top the hot lemon curd with meringue from crust edge to crust edge before popping in the oven to brown.

Excellent crust. Turns out well every time if I don't rush the refrigeration step. If using for a no-bake filling, I bake the crust at 375 degrees F for 5 to 10 minutes until browned.

Roast Spatchcock Turkey

I will never roast turkey the traditional way again. Done in 2/3 time. I never knew white turkey meat could be so moist. And the name is so funny it makes me smile.

Greek Chicken and Potato Bowl

Perfect for a hot, summer evening meal. I made the chicken and potatoes in the cooler morning hours. I warmed them slightly in the microwave just before tossing them with the salad dressing, cucumbers, tomatoes, and feta. Delicious

Delicious. Everyone who likes rhubarb will enjoy this. I am gluten free and used a gluten free mix. I made it with a from scratch cake and heavy cream too and it was also great.
