Just recently, I had the time to really get into cooking exploring the creative side of cooking. It's been really fun.

Chickenloaf Balls with Gravy & Rice

This is a really quick and filling meat for a big family. My family thought it was delicious. You can have it over rice or pasta or even omit the gravy. Very versatile meal.

Herdez Grilled Swai w/ Broccoli and Rice

This was a really quick and healthy meal that gives you a new twist on fish, mexican style. You can make it even more nutritious by substituting the white rice for brown. I found Swai to be more economical than catfish. It's a very yummy fish that's very versatile.

Roasted Chicken w/ Spicy Gremolata and Stuffing

I got this recipe from a wonderful chef that I have adjusted to my taste. The germolata makes the chicken so favorful and tender. You can also use it on turkey or duck. Use Stove Top stuffing as a quick and easy side dish. The additions to the stuffing is just to increase the favor of it.

Tangy Country Ribs with Green Peppers and Onions

This is a great recipe for those of us who just want to set it, forget it and allow the meat and veggies to do all of the work. Wonderful for busy parents. I took a big risk with the marinade, but it paid off well.

Cranberry Nut Chocolate Oatmeal Cookies

These are all my favorite things put into a fab cookie. What could be better????

Summer Grilled Chicken Salad

This is a great salad for the summer time. Its a has beautiful color and a great taste. It made with whole wheat pasta, which is a plus for those who suffer from diabetes like my husband.

Chicken meatballs and Spaghetti

Chicken meatballs and spagetti is a great alternative to beef or pork. Now, I love beef and pork, but I wanted to give my family something different. This is a recipe for a family of five, plus a little overage for leftovers.
