This was a really quick and healthy meal that gives you a new twist on fish, mexican style. You can make it even more nutritious by substituting the white rice for brown. I found Swai to be more economical than catfish. It's a very yummy fish that's very versatile.

Roasted Chicken w/ Spicy Gremolata and Stuffing

I got this recipe from a wonderful chef that I have adjusted to my taste. The germolata makes the chicken so favorful and tender. You can also use it on turkey or duck. Use Stove Top stuffing as a quick and easy side dish. The additions to the stuffing is just to increase the favor of it.

Tangy Country Ribs with Green Peppers and Onions

This is a great recipe for those of us who just want to set it, forget it and allow the meat and veggies to do all of the work. Wonderful for busy parents. I took a big risk with the marinade, but it paid off well.
