Grilled Sweet Potatoes

Rating: 4.5 stars 85
I don't really like the traditional sweet potato casserole, but my son loves sweet potatoes, so I try to come up with different ways to cook them. This spring I tried grilling them. These are now a favorite of mine and my sons.

Spicy Oven-Roasted Plums

Rating: 4.5 stars 24
Several years ago, I was looking for a recipe to take advantage of our bumper crop of plums and came across a recipe for roasted plums. After tweaking it a bit, I have developed a very versatile version that my family and friends love. Season with ground white pepper and use it as a side dish for pork or chicken. Sprinkle with toasted almonds and spoon it over vanilla bean ice cream, angel food, or pound cake for dessert! Play around with the spice combination by adding cloves, allspice, or cayenne. Be adventurous!

Braised Balsamic Chicken

If you are looking for a balanced vegetarian meal that is easy to make but full of flavor, then I recommend this earthy, yet tangy chickpea and quinoa salad.

Quinoa Tabbouleh

Rating: 4.5 stars 976
This tabouli recipe is different. Instead of using bulgur like traditional tabouli, this recipe uses quinoa. It is a grain that is available at health food stores. It looks and tastes better than bulgur. My husband and I both love this and neither of us is vegetarian. It's a great meal for a hot summer day. The longer it sits the better it tastes.

This dish is very versatile. Try serving the filling on flour tortillas with hoisin sauce for a moo shoo type dish – or use it to top brown rice and veggies for rice bowls.

This stir-fried tofu with mixed vegetables is really delicious and healthy. The sauce is sweet, tangy, and full of flavor. We cook it at least once a week. You can substitute or add whatever vegetables you like.
