I tried this with some butternut squash instead of zucchini and added about half a pound of diced sirloin to this to satisfy the meat eaters in the family but otherwise stuck to the recipe - it was a big hit. Even the picky non-vegetable eating child liked it, and there was more than enough for two nights dinner for the whole family. Great!
Made the marinade exactly as described, the first time around, and it was good, but a few minor tweaks enhanced it. I used the zest from one of the lemons, a couple of pounds of chicken thighs and saved aside about a 1/4 cup of marinade. I put veggies on skewers (mushrooms, peppers, zucchini, red onion) and basted them with the extra marinade while we grilled the chicken. The veggies and chicken both turned out great!
