I made this with the ingredients as listed. but cooked it in the pressure cooker. Probably would have been better on the grill to give it the grilled flavor.

Baked Beer Can Chicken

The blend of seasoning was very good. However, the salt content is extremely high and was overpowering if you ate the skin of the chicken (and I only used half of the seasoning mixture) and I had a larger chicken. I would reduce the amount of salt (seasoned & regular). Chicken was very moist! I did mine in the oven, but will try sometime on the grill also. Will be using the carcass for making stock.

Very moist & tasty. Used caramel ice cream topping instead of caramels. (Saved time from unwrapping the candy!). Used it as a base for ice cream sundaes.

Excellent recipe as is! Sauteed the meat with some onions & green peppers and served with Spanish Rice, using the pork broth in the rice. The other half is shredded up, sauteed with onions, peppers & mushrooms and added chipotle tabasco sauce and used that as a filling for enchiladas. This is a tender, flavorful meat that can be seasoned as you please in any dish.

Pork Medallions with Balsamic Vinegar and Capers

Great recipe! I reduced the lemon zest & capers by half in case hubby didn't like the tartness. Just right for us, but would have had great wow factor if full strength. Based on reviews, I doubled the chicken broth, used 1/2 c. balsamic and 1/2 c. white wine, and thickened with corn starch. Served with wild rice.

Sangria a la Las Vegas Round Up 2011

Served at the Midwest Round-Up in KC. Perfect recipe, very refreshing. According to the submitter, do use cabernet sauvignon, it doesn't have to be expensive, but a substitution may not taste the same. Also use regular limes, not key limes since they may be bitter. Better if you use flavored sparkling water. All suggestions came directly from the submitter of the recipe. Thank you for a great recipe!

Chicken and Gnocchi Soup

Great comfort food! I sauteed chunks of chicken, added a small amount of poultry seasoning, and also a couple of dashes of cayenne pepper. Couldn't find gnocchi, but used cheese-filled ravioli. I did use the cornstarch slurry and it was the perfect consistency. Very Olive Garden-like. Next time will use the gnocchi.

Recipe creator indicated they didn't know exact measurements for spices, so keeping that in mind, I doubled the amount of Italian seasoning, added more garlic, and also added some beef soup base. Seemed to have a strong taste of the tomato paste, almost bitter.
