Basil Feta Chicken
Chicken topped with a combo of feta, basil and bread crumbs. I modified this recipe from one I found on Albertson's website. It's a lot easier, because you don't have to pound the chicken, plus I think adding basil to the feta, rather than using flavored feta gives the recipe more flavor.
Double Chocolate Chip Pancakes
These pancakes are pretty decadent - very chocolately. Serve them for a special breakfast or even for dessert. I served my with just butter, but they would be even better with a chocolate sauce. (recipe cobbled this one together from a variety of recipes I found for similar pancakes).
