LOVE this dish. Last time I made it I added less chili powder but this time I forgot to heed the warnings of others and it was not good. Three T was way too much and I like spicy but that amount killed all the other flavors. This is a great dish to use up any left over homemade chili, I dont like the canned stuff so much.

Polenta and Vegetable Casserole

Good! need to squish polenta onto bottom better, perhaps add an egg to set it/

Broccoli Blue Cheese Strata

I really liked this, I used French bread and it poofed up really nice. I would not make it again for people I don't know well as I find that a good chunk of the population is weird about blue cheese and overall the other strata I made with more traditional ingredients went over better.

Defiantly recommend adding more spices. I made it as is and it was pretty bland. The tempeh added a sort of strange texture to the dish that I liked but the family didn't. If I did it again, I would add more of the spices that the other reviewers added.

Homemade Tomato Sauce II

An excellent recipe, very easy to make and absolutely exquisite! We used extra virgin olive oil instead of the vegetable oil. Thanks for the great recipe!

Zucchini Mediterranean Style

Lovely as is but I added chick peas and a good table spoon of Italian seasoning as well as about a teaspoon of dried basil and some extra garlic salt. Quick, healthy and tasty. Serve with a hot crusty loaf of bread.

This may be five stars cubed! I used spinach instead of zucchini but it really lends itself to a variety of veggies. I wasn't paying attention to how long it cooked, but I did have to add extra water. Also, as others suggested, I added some of the lemon juice. Thanks!

lovely muffins. I doubled the amount of rhubarb and added chocolate chips! For a low fat version, you can leave out the butter and vegetable oil and add one banana and egg substitute. My kids gobbled them up!
