OATMEAL ALMOND CHOCOLATE CHIP COOKIES

These cookies are hearty with lots of oats and a little sweet. As you are placing them on the cookie sheets, you can form them to make a more uniform shape or bake them as drop cookies. CHICKEN TIKKA MASALA

Flavorful chicken in tomato sauce. Serve with some fresh ginger lemon basmati rice and grilled or toasted naan bread.

BEER BRAISED CHICKEN

You could replace the whole quartered chicken with 4 large chicken breasts, or 5-6 med sized boneless chicken breasts. Also, I recommend having 2 bottles of beer on hand, just in case you need to add a bit more to get enough sauce. This dish is a one pot wonder!

SANGRITO (SANGRIA MOJITO)

Sangria Mojito - lovely spring and summer refreshment and so easy! You can use your favorite berry... strawberry, raspberry, blackberry, or any mixture of berries.

POTATO CRUSTED QUICHE

This quiche is really great with or without the bacon. For the herbs, you can use just one or any combo. You can really add whatever your favorite veggies and herbs flavors are to this very easy and delicious quiche. great for breakfast, lunch, brunch or dinner.

RASPBERRY LEMON CAKE

It is best to use a lower intensity, late harvest extra-virgin olive oil when baking which gives a subtle flavor. Greek style yogurt works well. If cake begins to brown too quickly, tent with foil. For the 4th of July, I make this with half raspberries and half blueberries.
