My grandma shared this recipe with me and it's been a favorite of mine every year at Thanksgiving. It's by far better than any other yam side dish I've had. (I don't like yams and marshmallows.)
Apricot Jam (and Apricot Syrup)
It's really easy to make your own jam! This recipe uses the upside down jarring method to seal. The apricot kernels add a slight almond flavor to the jam after a while but can be left out. This also doesn't use Pectin which makes the recipe take a little longer, but it's worth it because you'll get a bunch of delicious apricot syrup that can be used on pancakes, waffles, vanilla ice cream, etc!

Pork Chili Rojo
My grandmother called this recipe "Pork Chili Verde" when she originally told me about it. But...it's red, not green. Not sure if she saw a recipe that called for "green salsa" and she put in the red or if it was really called something else. But I've made it a couple of times now and absolutely love it. It gets better every time! Serve with tortillas or broken hard taco shells.
