  • Heat oil in dutch oven or large pot over medium heat. Crumble Italian sausage and let cook 4 minutes on each side. Be careful not to over mix the sausage. Remove cooked sausage from pot soaking up any excess oil with a paper towel Leaving 2 Tbsp grape seed oil in the pot. Add onions, celery and carrots to the pot. Saute about 7 minutes until soften. Add garlic and saute another 2 minutes. Add chicken broth, tomatoes, tomato sauce, cooked Italian sausage and Italian seasoning. Bring to a simmer, lower heat to med-low. Cover and simmer until veggies are almost soft about 12-15 minutes. Add tortellini (see label instructions for cook time) about 3 minutes Turn off fire, stir in spinach and cover. Garnish with freshly grated parmesan cheese & crusty bread.
