**Cindy's Tip!--A mandolin works great for creating ribbons but a vegetable peeler is also a wonderful tool in the kitchen. You may want to discard the first few as it will be the green only from the zucchini's skin **

One-Pot Grilled Steak and Vegetables
I found by cooking all of this dinner in one pot added so much flavor to the dish and prevented the grill from flaming or pieces falling in the grate! Using my Cast Iron Pan made it super easy and I served dinner right from the pan! How easy is this......... Love one pot recipes and this one is Paleo too...
Glenn and I are not very big eaters and I don't go wow over steak (just me) but I go crazy over eggplant. I did pick up 2 boneless rib eyes at Highland Park Market but we only cooked up one and save the other (wrapped and froze for another dish). This was a perfect meal for the two

Zucchini Noodles and Butternut Squash in a Garlic-Lemon Sauce
I made this dish as one of the recipes for a charity event to benefit Place of Hope. We received amazing vegetables as donations and I thought this dish would be perfect. I wish we grabbed a photo of my friend Suhiel spiralizing an entire box of zucchini!
You can add poultry or seafood to make this dish hearty or enjoy as is for a perfect side dish or vegetarian option.
