Roasted Buffalo Chicken Deviled Eggs

This is such a great tailgating or just watching football at home! I like to make extra buffalo chicken and dip with celery and carrots. You can make this a paleo recipe by omitting the blue cheese! Enjoy..

Pasta A la Norma

As an Italian, it just doesn’t get better than pasta and eggplant! Give this pasta a la norma a try for a perfect weeknight dinner!

Zucchini Ribbon and Spinach Saute

Serving this dish with fresh grilled fish is a perfect combination. Zucchini (courgette) can be grilled, fried, sauteed, or eating raw in a salad. I grew up eating zucchini and eggs for breakfast and now, I just love making pasta with this versatile vegetable! **Cindy's Tip!--A mandolin works great for creating ribbons but a vegetable peeler is also a wonderful tool in the kitchen. You may want to discard the first few as it will be the green only from the zucchini's skin ** You can also find this recipe in my cookbook: Paleo Italian Cooking.

One-Pot Grilled Steak and Vegetables

I found by cooking all of this dinner in one pot added so much flavor to the dish and prevented the grill from flaming or pieces falling in the grate! Using my Cast Iron Pan made it super easy and I served dinner right from the pan! How easy is this......... Love one pot recipes and this one is Paleo too... Glenn and I are not very big eaters and I don't go wow over steak (just me) but I go crazy over eggplant. I did pick up 2 boneless rib eyes at Highland Park Market but we only cooked up one and save the other (wrapped and froze for another dish). This was a perfect meal for the two

Sautéed Shrimp with Spinach, Tomatoes and Penne

My Sautéed Shrimp with Spinach, Tomatoes and Penne is a great meal to prepare together with your kids, friends or spouse. The beautiful colors and flavors make this a perfect lunch or dinner! You can simply omit the pasta if you are following the paleo diet or use gluten free pasta, spaghetti squash or zucchini noodles!

Lemon Zucchini Spaghetti with Shrimp

Rating: 5 stars 7
We just love our zucchini pasta at home. I go every Sunday to our farmers market and stock up! Today I even had some left over fresh spinach from the week and decided to add it in as well. You can omit but if you have spinach or any other leftover veggies - Go ahead and add them in! Enjoy

Zucchini Pasta Shrimp Scampi

just love shrimp scampi and making it with zucchini noodles is even more delicious! Enjoy

Paleo Seafood Chili

Why be traditional during a football game with a meat chili! Everyone makes one... Go ahead and make my Paleo Seafood Chili. It is hearty and full of flavor. Thank you City Fish for the amazing and fresh seafood! If you are adding beans in your diet then go ahead and drain a can of red kidney beans and add to the pot. Enjoy and go Patriots!

Pork Chops, Kale and Mushroom in a Spicy Broth

Here is another one pot recipe that you can prepare, cook and serve in 30 minutes with no mess to clean after! Just the pot and your plates. Enjoy this paleo recipe for 2! If you want to know my "secret ingredient" to make the sauce in this dish and some of my others extremely special... It's adding a little Dijon Mustard in the broth. I promise once you try it - You will add it to many of your dishes! Go ahead.. try it..

Artichoke and Spinach Balls

I love keeping frozen vegetables handy in the refrigerator. We were invited to a friends house and came up with these to bring. I had all of the ingredients. Enjoy! PS - I made these, packed them up and they vanished. I totally forgot to take a photo of the finished balls. New time...

Zucchini Noodles and Butternut Squash in a Garlic-Lemon Sauce

Rating: 5 stars 2
I made this dish as one of the recipes for a charity event to benefit Place of Hope. We received amazing vegetables as donations and I thought this dish would be perfect. I wish we grabbed a photo of my friend Suhiel spiralizing an entire box of zucchini! You can add poultry or seafood to make this dish hearty or enjoy as is for a perfect side dish or vegetarian option. Enjoy!
