This recipe has become a Christmas morning tradition in my household and will be for years. I would suggest using twice the amount of lemon juice and zest. I would also suggest to use real lemons and butter. I've made it both ways and it is just not worth eating if you use the fake stuff.
These were not very good they tasted like cooked oatmeal that had been baked.
I love this recipe. This cookie is my back-up recipe for any event or family gathering. I do change the recipe a little because they tend to be a little greasy. I use half shortening and half butter instead of all butter and reduce it by at least a 1/4 cup. Also I add more coconut and instead of all semi-sweet chocolate chips I use a variety of whatever kind I have on hand. I usually use a mix of milk, white, butterscotch (i think the butterscotch really brings out the best in the cookie) and semisweet chocolate chips. I also add a little spice like nutmeg, cinnamon, cloves, almond extract, or whatever sounds good. Enjoy.
I exchanged the butter cake with a spice cake mix thinking it would be a nice update. I was wrong. I'll try it again with a butter mix like recommended
This muffins are my new favorite recipe ever. I love the fact they use so many bananas (I would definately mash them really well). I have used pears and peaches and plums and they all taste great. I change the spices for the different fruit to highlight different tastes. Pears - Ginger, Peaches - Nutmeg, plumes ?.
This is a really good way to use apples or zuchinni. I only had 3 apples so I used applesauce for the rest of the amount. The cake is very dense and moist. It was a hit.
