Kathy Costa Upshaw

Simple life I've been married 38 years, we have 3 grown children and 2 grandchildren. I love simple living -- home, needle crafts, cooking, exercise, reading and spending time with family and friends. My husband and I are currently in the process of downsizing. Lots of work!

Allrecipes has helped me become a better cook. The recipes inspire me to try new things and to be creative. I like the variety of recipes offered. . . I started using the site as a regular American cook. There are recipes for that style. When I started cooking more raw foods and eating a healthier diet, I found lots of recipes for that too!
Terry's Texas Pinto Beans

This is my new favorite bean recipe. Simple and delicious! Because I don't like spicy food, I always leave out the jalapeño pepper. The first time I made it, I substituted regular salsa, but have also made it with the green (preferred the red). I have tried both bouillon and canned chicken broth (preferred the bouillon). Cumin is a new spice to me, so I cut it in half. First time I made it, I had left over dark chicken in the fridge from a store-bought roasted chicken. Added it to the beans and was blown away! Tasted like a mild chicken chili.

Following the recipe exactly, I made LOTS of cupcakes. We had the lobby of our local movie theatre decorated like a wedding reception and served these cupcakes for the premiere of "Breaking Dawn Part 1." I'm not a big fan of white cake, but this one is wonderful! Great taste and texture.

This is the tastiest quick bread ever! It is far better than my standard pumpkin bread recipe (which I started making in my high school cooking class 36 years ago.) The texture and spices were awesome! Highly recommended!

I LOVE apple crisp, but wanted to try something a little bit different. What could be more holiday-ish than adding cranberries? This filled the bill, but wasn't better than straight apples.

Loved this recipe! It is very like the nine-bean soup recipe that came with my crock pot back in the 80's. will definitely make this again.

Yum! I didn't choose this recipe for it's healthy nature, but because my husband likes sweet cornbread. It delivered! Made it for New Year's Day to go with black-eyed peas and cabbage. Neighbors also loved it.
