I made it without adding the sugar and it tasted great.
agree with lovetomunch I accidentally added 1 1/2 cup of apple cider (not apple juice) and it was a great consistency.
I use a tall container that is plastic and a screw top lid for the unbreakable storage. I place the heavier salad items at the bottom and the lighter items on top so it doesn't crush the whole salad. I pack my salad dressing separately in a small spill-proof container. It is a great thing to make in advance and have ready to go to work for lunch.
I’m not a huge fan of hominy or beans so I eliminated those from the recipe. It’s a winner
