Banana Cake

I have to say this is the best banana cake I have ever tried. It is thick and moist and has a wonderful banana flavor. I used 4 very ripe bananas and this measured a little more than the 1-1/2 cups that the recipe called for. "Fanatastic" is the best word to describe this cake. I will definitely make this again...and again! It's sure to be one of my family's favorite recipes.

Chocolate Mint Candies Cookies

These are wonderful chocolate cookies. I will definitely make them again. They are chewy and chocolatey and the candy glaze on top makes them fantastic. I didn't have any chocolate mint candies so I used Hershey's Chocolate Kisses and they turned out great. This change eliminated the mint flavor, but the result was just as yummy.

Great cake! Very moist and tasty. The addition of the peach flavor gives the cake an interesting flavor twist. I didn’t actually have peach nectar so I puréed some canned peaches. This was the only change I made. I will make it again.

Moist Banana Muffins

Aunt Norma's Rhubarb Muffins

I thought these were great muffins. It's a great way to use my rhubarb. The muffins were moist and tasty. I made some changes to the recipe. After reading the reviews, I added a little bit more rhubarb--2 cups instead of 1-1/2 cups--and I used 1-1/2 tsp. baking powder instead of 1 tsp. Also, I used allspice instead of cinnamon because I just like it better. I added 1 tsp. of allspice to the batter and substituted allspice for the cinnamon in the topping. The muffins were wonderful. The sweet, crunchy topping was good too, but I think I might make the muffins without it next time. I think they would be great even without the extra sugar and sweetness of the topping.
