This did not turn out well at all. It looked like rice pudding after cooking, and after blending it turned into a rice shake.
This was really good. I would definitely make this again.I added a can of diced tomatoes, more red pepper used white onion instead of green, and added extra rice (and extra water because the rice soaked it up).
I cheated and made a full fat version with loads of extra sauce (Prego italian sausage flavor), mozzarella cheese, and ricotta instead of cottage cheese, so I'm not sure how this recipe was really supposed to taste. But it was excellent. I give it 5 stars because it was so easy and so fast, even though I used regular noodles that I had to cook.
It was only last week that I was sipping one of these on a beach in Montego Bay. Definitely the real deal. Thank you!
I love these. I have made them many times, and they always turn out perfectly.
I didn't have the patience to roll the sticky dough into balls and didn't care how they looked, I just wanted the cookies to be done so I could eat them. So I dropped walnut sized blobs of dough onto the baking sheet. Made them without raisins and nuts because I didn't have any. They are so sweet and good just as they are, nice and chewy.
Oh these are just so good!
Hmm, how do you rate a recipe after making so many changes to it? I thought it was wonderfully moist and flavorful, though I did follow some suggestions from other reviewers, mainly reducing the oil to 1/2 cup and adding 1/2 cup applesauce.
It's funny how some recipes just don't come out right for some people. I have to agree with the majority of the reviewers on this one, however. These cookies are just awesome. Chewy and spiced just right. I soaked my extra large raisins in hot water so they were nice and plump, and I used pumpkin pie spice instead of cloves because that is what I had. They're going to work with me tomorrow and I know I'll be bringing home an empty container.
