To sum these up quickly? Just...wow!! A new " go to " favorite for me to whip up. Followed recipe as written,so the only thing I can note is that I used my home made applesauce. My girls will have me at Rockstar status after breakfast in the morning!

My "go to" recipe! Won't ever need to find a different one. I use half milk and half heavy cream for a richer end result. Add a nice dollop of home made whipped cream on the top about ten minutes after it's ready and you're family sings your praises the rest of the day!

Raspberry Lemon Meringue Pie

Lemon/ raspberry is my family's absolute favorite combination! Beautiful results! I will admit,I substantially increased the raspberry layer,though. A half a cup would have only been a tiny smear of raspberry. I cooked down two full cups because I always run berries through a fine sieve to de-seed. Also whipped 4 egg whites instead of 3 for the meringue. Thanks for sharing this wonderful recipe!

Chocolate Chip Muffins

Delicious potential ! I bumped oil and milk up and was a little heavy handed on the chocolate chips. Also added about a teaspoon of vanilla extract. My only complaint is that I should have gone with my gut and not baked at such a high temp. The bottoms burned at 17 minutes. The only time I start a muffin that high is corn,where I give it a nice crisp top at 400 then kick it down to 350. I kicked this one down to about 380 at the 10 minute mark and opened the door to rotate and cool the oven,alas too late. Next time ( which there will be ) I will go 5 min at 400 then kick it down to 350.

The only change I made was cutting sugar from 3/4 to 1/2. Gotta cut it out where I can and with the chocolate chips, I found them perfect. Great recipe!

Whole Wheat Pumpkin Applesauce Muffins

A great muffin for me to come back to and play around with! Made the first batch less the white sugar (I always cut sugar where I think I can). Second batch had a quick oat struesel topping to make them (less healthy!)but a little different. Will make sure I have pecans on hand for the next time I make these. Solid recipe..thanks for sharing!

Apple Bundt Cake

Very nice recipe! I made it last night,but should have taken it out 2 or 3 minutes earlier. 52 min in my oven would have been fine,since it will finish off those few minutes in the pan cooling. I'm my own worst critic,but family raved! I very stupidly forgot to layer in the apples, so I just mixed them into the pan. I cut back on sugar by 1/4 c and added a teaspoon of nutmeg to the batter. Baking again right now for the neighbor. Went with 1c white sugar and 2/3 c dark brown sugar. Again, went with nutmeg and cinnamon. Instead of finishing with powdered sugar,I made a drizzle using chai instead of milk. Didnt seem to add anything to flavor to me, but "chai drizzle" seemed to excite everyone!?

Used white pepper instead of black, refrigerated the dough for about 4 hours and baked for 10 minutes. Perfection!

Cinnamon Swirl Bundt Coffee Cake

I've made this one 3 times since November and it's been a hit every time! My only recommendation is to NOT use spray Pam on the pan. Instead, I happened upon the awesome advice to mix equal parts of shortening, veg oil and flour. I mixed 1/3 cup of each and used it for 4 or 5 bundt pans, simply by using a paper towel and wiping it into the pan. This keeps the outer edge of the cake from getting too crisp/hard.
