Spicy Baked Tofu

A spicy tofu marinade adds tons of flavor to this protein-packed dish. I don't find it overly spicy, but I like some heat in my faux meat. Tofu is a concentrated protein, so you don't need as much per serving as you would meat. This dish is great reheated! If you want to be really creative, try grilling your tofu for an even more delicious result! I serve this with wilted spinach and a fresh salad on the side.

Baked Tofu Bites

Tofu cubes are marinated and then baked in the oven. The tofu can be used as a hot or cold snack or used as salad topping. Don't forget the smoke flavoring, it really adds the special flavor.

Tofu Parmigiana

Breaded tofu a la parmigiana. You'll just about swear this is eggplant or veal! One of my husband's favorites, and he doesn't even suspect! Serve with a simple crisp green salad, angel hair pasta and garlic bread.
