Easy Slow Cooker French Dip

Loved this. My family loved this. I don’t venture too far from my usual repertoire of the same 5 recipes, but I wanted to try something new. If I can make this, you can make this. I followed the recipe exactly as written, except that due to taking my 80 year old mom to her doctor appt and running the teen to youth group it was in the slow cooker on low for 7:35hr and on warm for about 3 additional hours. I figured it was doomed, but sliced the meat and returned to the juice for another hour while tending to the dog who just had surgery. Sautéd a yellow onion, toasted the open face of the buns in a skillet, added meat, layered the onions, put two slices of provolone on top and placed under the broiler until bubbly and browned. These words can’t out of my husbands mouth: “this is the best French dip I’ve ever had”. Paired well with Simply Lemonade & vodka.
